INGREDIENTS

Ingredients

  • 1/2 cup olive oil
  • 1/4 cup white wine vinegar
  • 1 tablespoon Flavor Maker Mediterranean Topping Seasoning
  • 3 cups diced English cucumber (3/4-inch dice)
  • 3 cups seeded and diced plum tomato (3/4-inch dice)
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1/2 cup thinly sliced red onion
  • 2 cups chopped romaine lettuce
  • 1/4 cup pitted kalamata olives, halved (optional)
  • 1/4 cup crumbled feta cheese

INSTRUCTIONS

  • 1 Mix olive oil, vinegar and Flavor Maker Seasoning in large bowl with wire whisk until well blended. Add cucumber, tomato, chickpeas and red onion; toss to coat well. Cover.
  • 2 Refrigerate at least 1 hour or until ready to serve. Stir in chopped romaine and sprinkle with olives and feta cheese just before serving.
