Make a chicken or pork chop dinner extra special with this easy side dish of kale and rice.
Cook bacon in large skillet on medium-high heat until crisp. Remove bacon with slotted spoon; drain on paper towels. Drain fat, reserving 1 tablespoon bacon drippings in skillet. Add kale and onion; cook and stir 1 minute or until kale is wilted.
Stir water and Rice Mix into skillet. Bring to boil. Reduce heat to low; cover and simmer 25 minutes.
Stir in bacon; cover and simmer 5 minutes longer or until rice is tender. Remove from heat. Let stand 5 minutes.
