Heat oil in large skillet on medium heat. Add onion; cook and stir 2 minutes or until softened.
Stir water, Rice Mix and jerk seasoning into skillet. Bring to boil. Reduce heat to low; cover and simmer 15 minutes.
Stir in peas and carrots. Cover and cook 10 minutes longer or until rice is tender. Remove from heat. Let stand 5 minutes. Fluff rice with fork before serving. Serve with lime wedges.
