INSTRUCTIONS

  • 1 For the Cocktail Base, bring water to a boil in medium saucepan. Remove from heat and let stand 5 minutes. Add tea bags; steep 3 minutes. Discard tea bags. Transfer tea to large glass bowl or food-safe plastic container. Set aside.
  • 2 Place cinnamon sticks, cloves, coriander and star anise in spice grinder or clean coffee grinder. Pulse until coarsely ground. Add spice mixture and remaining Cocktail Base ingredients to container with tea, stirring to mix well. Cover and refrigerate 2 hours.
  • 3 Meanwhile, for the Milk Clarification Liquid, bring milk to simmer in medium saucepan. Add cereal and cinnamon, stirring until well blended. Remove from heat. Allow to cool. Transfer to large bowl or food-safe plastic container.
  • 4 Place a fine mesh strainer over container with Clarification Liquid. Strain Tea Base into Clarification Liquid. Allow mixture to stand at room temperature without stirring at least 30 minutes or up to 1 hour (mixture will begin to curdle within a few minutes).
  • 5 Strain mixture through clean fine-mesh strainer lined with a coffee filter (this may take several minutes). Finely crush additional cereal and place on small plate. Moisten rim of 6-ounce coupe glass. Dip in cereal to coat. Fill cocktail shaker with ice. For each serving, add 4 ounces cocktail mixture to shaker. Shake vigorously and strain into prepared glass. Garnish with whipped cream. Refrigerate any remaining cocktail mixture in airtight container up to 1 week.
