Grilled Zucchini with Pine Nuts and Goat Cheese

Sprinkle grilled zucchini with toasted pine nuts and crumbled goat cheese for an extravagant summer vegetable dish.

  • In large resealable plastic bag, pour 1/4 cup Lawry's® Lemon Pepper Marinade with Lemon Juice over zucchini; turn to coat. Close bag and marinate in refrigerator 30 minutes.

  • Remove zucchini from Marinade, discarding Marinade. Grill or broil zucchini, turning once and brushing frequently with remaining Marinade, 6 minutes or until tender; coarsely chop.  

  • Toss zucchini with pine nuts, then top with cheese.
