Slow Cooker Country Chicken Stew

Chicken stew is the ultimate one-pot comfort food. See the tip below for prepping the ingredients the night before.

  • Place potatoes, carrots and onion in slow cooker. Place chicken on top of vegetables. Mix water, seasoned salt, parsley and pepper in small bowl until well blended. Pour over chicken and vegetables. Cover.

  • Cook 8 hours on LOW or 4 hours on HIGH.

  • Mix cornstarch and milk in small bowl until smooth. Stir into sauce in slow cooker. Cover. Cook 15 minutes longer on HIGH or until sauce is thickened. Serve with biscuits, if desired.

Cooking tip

Test Kitchen Tips:
•For a quick start in the morning, cut the vegetables into pieces the night before, then refrigerate until you're ready to start cooking. Just remember to cover the potatoes with water to prevent discoloration; drain before adding to the slow cooker.
•For best results, do not remove cover during cooking.

    We weren't crazy about this recipe. I followed the exact measurements for the spices but my husband and I thought there was too much pepper. I used white potatoes with the skins on and whole carrots peeled & cut into chunks because that's what I had on hand. I doubled the amount of water because I knew 1/2 cup wouldn't be enough, then had to add another 1/2 cup or so part way through the cook time because the chicken was drying out. I used a new crock pot and the inside glaze ended up being scorched from not having enough liquid. Pro: quick, easy prep. Con: too much pepper, not enough liquid.
