Flavorful soup in 20 minutes? Yes, with Zatarain’s Red Beans and Rice, andouille sausage and vegetables on hand, you can have a hearty soup on the table in no time. Serve for the whole family or freeze for quick meals later.
1 tablespoon oil
1 cup coarsely chopped celery
1 cup coarsely chopped onion
2 teaspoons minced garlic
1 cup coarsely chopped red bell pepper
1/2 teaspoon oregano leaves
7 cups water
1 package ZATARAIN'S® Red Beans and Rice with Sausage
1 cup frozen corn kernels
8 ounces andouille sausage, halved lengthwise and thinly sliced
Heat oil in large saucepot or Dutch oven on medium heat. Add celery, onion and bell pepper; cook and stir 3 minutes or until vegetables are tender. Add garlic and oregano; cook and stir 1 minute.
Stir in water, Rice Mix, corn and sausage; bring to boil. Reduce heat to low; cover and simmer 15 minutes, stirring occasionally.
Ladle into soup bowls to serve.
Test Kitchen Tip: Sprinkle with cilantro and serve with lime wedges, if desired.
