Creole Fruited Rice Salad

Want a new fruit salad recipe? Try this Creole twist with a unique fruit and rice salad at your next barbecue, picnic or potluck. Start with Zatarain’s Jambalaya Mix and top it off with apples, oranges, grapes and honey – sweet and savory in 25 minutes.

  • Bring water and oil to boil in medium saucepan. Stir in Jambalaya Mix; return to boil. Reduce heat to low; cover and simmer 25 minutes or until rice is tender. Remove from heat. Let stand 5 minutes

  • Spoon rice mixture into large bowl. Cool to room temperature. Fluff with fork

  • Meanwhile, mix poppy seed dressing, parsley, orange juice and honey in small bowl. Add fruit and celery to rice mixture; toss gently until mixed. Drizzle dressing over salad; toss gently. Serve immediately. Or, cover and refrigerate until ready to serve
