Spicy Chicken and Black Bean Salad with Avocado

This spicy rice salad is quick, easy and perfect for entertaining. Southwestern ingredients such as avocado, chipotle peppers in adobo sauce and cilantro complement Zatarain's Black Beans and Rice Mix to give the perfect amount of kick.

INGREDIENTS

Servings: 6 (1 cup)

Ingredients

  • 2 1/2 cups water
  • 1 package Zatarain's® Black Beans & Rice Dinner Mix
  • 2 cups cubed cooked chicken
  • 1/2 medium red bell pepper, cut into 3/4-inch pieces (1/2 cup)
  • 1/4 cup thinly sliced green onion
  • 3 tablespoons lime juice
  • 2 tablespoons chopped cilantro
  • 2 tablespoons olive oil
  • 2 teaspoons chipotle pepper in adobo substitution Substitutions available
    • chipotle hot pepper sauce

INSTRUCTIONS

  • 1 Bring water to boil in medium saucepan. Stir in Rice Mix; return to boil. Reduce heat to low; cover and simmer 25 minutes or until rice is tender. Remove from heat. Let stand 5 minutes
  • 2 Spoon rice mixture into large bowl. Cool to room temperature. Fluff with fork
  • 3 Mix remaining ingredients in medium bowl. Add to rice mixture; mix well. Serve immediately. Or, cover and refrigerate until ready to serve. (Do not add avocado until ready to serve).
