Grilling shrimp for shrimp cocktail adds so much more flavor than steaming. Instead of cocktail sauce, serve the shrimp with a chunky salsa.
1 cup Lawry's® Baja Chipotle Marinade with Lime Juice , divided
1 cup chopped red bell pepper
2 tablespoons chopped red onion
1 tablespoon chopped fresh cilantro
1 tablespoon lime juice
1 1/2 pounds uncooked large shrimp, peeled and deveined
Mix 1 tablespoon of the marinade, red pepper, onion, cilantro and lime juice in small bowl. Cover. Refrigerate until ready to serve.
Meanwhile, place shrimp in large resealable plastic bag or glass dish. Add 3/4 cup of the remaining marinade; turn to coat well.
Refrigerate 15 minutes. Remove shrimp from marinade. Discard any remaining marinade in bag.
Grill over medium heat 6 to 8 minutes or just until shrimp turn pink, turning frequently and brushing with remaining marinade. Serve shrimp with salsa.
