Steep white tea leaves and Whole Cardamom Pods in the sun for a light and refreshing tea with exotic floral flavor. Use Simple Syrup instead of sugar to sweeten the iced tea to avoid any undissolved grains of sugar.
Place water, tea leaves and cardamom pods in large container or pitcher. Stir. Cover with lid or plastic wrap. Let stand in sun for 3 to 5 hours.
Strain tea, discarding tea leaves and cardamom pods. Serve tea over ice or refrigerate until chilled. Sweeten with Simply Syrup, if desired.
• White tea comes from immature tea leaves and buds that are simply steamed then dried. This minimal processing gives white tea its pale color and sweet flavor. It is available in some supermarkets, tea stores and online specialty stores.
Simple Syrup: Place 1 cup each sugar and water in small saucepan on medium heat. Bring to boil. Reduce heat to low; simmer 3 minutes, stirring to dissolve sugar. Refrigerate until ready to serve. Sweeten tea with 2 tablespoons Simple Syrup per 1 cup tea. For Southern-style sweet tea, increase Simple Syrup to 1/4 cup.
