Shrimp and Serrano Quesadillas

Ingredients

  • 4 tablespoon vegetable oil, divided
  • 1 medium white onion, chopped
  • 1 serrano pepper, finely chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon McCormick® Pure Ground Black Pepper
  • 1 pound medium shrimp, peeled and deveined chopped
  • 3 medium plum tomatoes, seeded and chopped
  • 3 tablespoons finely chopped fresh cilantro
  • 1/2 cup McCormick® Balanced Mayonnaise with Soybean Oil
  • 1 1/2 cups shredded Oaxaca cheese
  • 12 (6-inch) flour tortillas

INSTRUCTIONS

  • 1 Heat 1 tablespoon of the oil in large skillet on medium heat. Add onion, serrano pepper, salt, and pepper. Cook and stir 4 to 5 minutes or until onions are softened. Add shrimp and tomato; cook and stir 3 minutes or until shrimp just turn pink. Transfer shrimp mixture to large bowl; allow to cool completely. Stir in Mayonnaise and cilantro.
  • 2 To assemble quesadillas, place 1/4 cup of the shrimp mixture on one half of each tortilla. Sprinkle with 2 tablespoons of the cheese. Fold tortillas in half to enclose shrimp and cheese.
  • 3 Heat 1 tablespoon of the remaining oil in large skillet on medium heat. Carefully place 4 folded quesadillas in skillet. Cook 2 to 3 minutes per side, or until tortillas are browned. Remove from pan. Repeat with remaining oil and quesadillas. Serve with salsa verde, guacamole and lime wedges, if desired.
