1 cup ricotta cheese
1 package McCormick Gourmet™ Garlic & White Wine Chicken Scaloppine Recipe & Seasoning Mix , divided
1 medium red pepper, cut into strips
1 medium red onion, thinly sliced
1 cup asparagus pieces, 1-inch pieces
1 cup sliced yellow squash
3 tablespoons olive oil
1 prepared pizza crust, 12-inch
1 large plum tomato, sliced thin
1 cup shredded mozzarella cheese
Preheat oven to 450ºF. Mix ricotta cheese and 1 tablespoon of the Seasoning Mix in small bowl until well blended. Cover. Refrigerate until ready to use.
Toss vegetables with oil in large bowl. Sprinkle with remaining Seasoning Mix; toss to coat evenly. Heat large nonstick skillet on medium-high heat. Add vegetable mixture; cook and stir 4 minutes or until tender-crisp. Place pizza crust on baking sheet. Spread crust evenly with ricotta cheese mixture, vegetables, tomato and mozzarella cheese.
Bake 8 to 10 minutes or until cheese is melted. Slice and serve immediately.
