A great way to use a bounty of zucchini. Serve the salsa as a dip with tortilla chips or as a topping for grilled chicken, fish, pork or burgers.
Mix agave nectar, vinegar, lime juice and seasonings in large bowl. Add remaining ingredients; toss well. Cover.
Refrigerate until ready to serve.
• Choose zucchini under 8 inches in length – these will be the most tender and will have undeveloped seeds.
