This hearty take on a BLT features grilled chicken, crisp lettuce, juicy tomatoes, smoky bacon and creamy mayonnaise dressing on a crusty roll.
4 boneless skinless chicken breast halves, about 1 1/4 pounds
1/4 cup plus 1 tablespoon Lawry's® Sweet Southern BBQ Marinade with Lawry’s® Seasoned Salt , divided
1/4 cup mayonnaise
4 Kaiser rolls, toasted
8 slices cooked bacon
1 medium tomato, sliced
4 lettuce leaves
Place chicken in large resealable plastic bag or glass dish. Add 1/4 cup of the marinade; turn to coat well. Refrigerate 30 minutes or longer for extra flavor.
Meanwhile, mix mayonnaise and remaining 1 tablespoon marinade in small bowl. Refrigerate until ready to serve. Remove chicken from marinade. Discard any remaining marinade.
Grill chicken over medium heat 6 to 7 minutes per side or until cooked through, brushing with additional marinade, if desired. Spread mayonnaise mixture evenly on rolls. Top with chicken, bacon, tomato and lettuce.
