Two fall favorites, sweet potatoes and apples, are roasted with pork tenderloin for an easy one-pan dinner.
1 package McCormick Gourmet™ Bourbon Spiced Pork with Roasted Sweet Potatoes & Apples Recipe & Seasoning Mix
1/3 cup packed brown sugar
2 pork tenderloins, about 1 pound each
1 tablespoon vegetable oil
1/4 cup orange juice
3 medium sweet potatoes, about 1 1/2 pounds, peeled and cut into 1-inch cubes
2 apples, such as Gala or Fuji, unpeeled, cored and halved
Preheat oven to 425ºF. Mix Seasoning Mix and brown sugar. Reserve 1/4 cup. Brush pork with oil. Rub with remaining Seasoning mixture. Place pork tenderloins in center of large shallow foil-lined baking pan.
Mix reserved Seasoning mixture and orange juice in large bowl. Add sweet potatoes and apples; toss to coat well. Arrange sweet potatoes and apples, cut sides down, around pork.
Roast 30 to 35 minutes or until pork is desired doneness and sweet potatoes are tender. Toss sweet potatoes and apples with pan juices; serve with sliced pork.

One of the best meals I have ever made!! I added zucchini to it as well
Was this helpful?
I actually used a crockpot instead of putting in the oven. It turned out fantastic! Meat just fell apart as I was taking it out of the crockpot. The orange juice created a nice sauce. Definitely a keeper.
I loved this dish! The flavors were amazing! I cut the apples into slices rather than halves as the recipe called for, so the apples ended up a bit musher than I would have liked. I will definitely follow the directions before I start cutting up the apples next time, but even with my mistake, this dish was extremely tasty!
i like this dish nice and hearty but I didn't like the mushiness of the baked apples..
PLEASE keep this product on the market. I would make this at least once a week if I could always get pork loin on sale.
Great flavor with little effort!
