Usage Tips

PREP TIME: 15 minutes
Makes 8 servings.

YOU WILL NEED
1 pkg. McCormick Seasoning Mix
1 1/2 lbs. boneless skinless chicken breasts, cut into 1/2-inch cubes
2 cups frozen chopped bell pepper and onion blend
1 qt. (4 cups) chicken stock
1 can (14 1/2 oz.) petite diced tomatoes, undrained
1 cup crushed tortilla chips or tortilla strips

Assorted Toppings: chopped avocado, shredded cheese, chopped green onions, chopped cilantro, sour cream or lime wedges

DIRECTIONS

1. PLACE chicken and frozen vegetables in slow cooker.

2. MIX Seasoning Mix, stock and tomatoes in bowl until blended. Pour over chicken and vegetables; stir to coat. Cover.

3. COOK 8 hours on LOW or 4 hours on HIGH. Ladle into soup bowls. Sprinkle with tortilla chips. Serve with desired toppings.

Slow Cooker Tip: For best results, do not remove cover during cooking.

  • Excellent flavor however I did make a couple of additions. I added two cans of black beans, drained and the last half hour added about 4 tbsp. of corn meal mixed in hot water to help give it more substance. Next time I'll also use more meat.
