Makes 8 servings.
YOU WILL NEED
1 pkg. McCormick Seasoning Mix
1 1/2 lbs. boneless skinless chicken breasts, cut into 1/2-inch cubes
2 cups frozen chopped bell pepper and onion blend
1 qt. (4 cups) chicken stock
1 can (14 1/2 oz.) petite diced tomatoes, undrained
1 cup crushed tortilla chips or tortilla strips
Assorted Toppings: chopped avocado, shredded cheese, chopped green onions, chopped cilantro, sour cream or lime wedges
1. PLACE chicken and frozen vegetables in slow cooker.
2. MIX Seasoning Mix, stock and tomatoes in bowl until blended. Pour over chicken and vegetables; stir to coat. Cover.
3. COOK 8 hours on LOW or 4 hours on HIGH. Ladle into soup bowls. Sprinkle with tortilla chips. Serve with desired toppings.
Slow Cooker Tip: For best results, do not remove cover during cooking.
