YOU WILL NEED
1 pkg. McCormick Seasoning Mix
3 tbsp. olive oil
6 cups assorted vegetables, such as eggplant, zucchini, yellow squash, plum tomatoes and bell peppers, cut into 1-inch chunks
1. MIX Seasoning Mix and oil in large bowl. Add vegetables; toss to coat well.
2. SPREAD vegetables in single layer on foil-lined 15x10x1-inch baking pan sprayed with no stick cooking spray.
3. ROAST in preheated 425°F oven 30 to 40 minutes or until vegetables are tender, stirring halfway through cooking.
Test Kitchen Tip: Serve on toasted sliced French bread, if desired.
