Combine ground turkey, ground pork, sage, cumin seeds, garlic, onion, black pepper, crushed red pepper, oregano and tarragon in a large bowl. Form the mixture into six 3-to 4-inch-diameter patties.
Lightly coat a 12-inch nonstick skillet with cooking spray and heat over medium heat. Brown the patties on both sides, about 4 minutes per side, or until cooked through. Serve hot.
