Preheat oven to 375°F. Lightly sprinkle both sides of each chicken breast with blackened steak seasoning. Heat 1 tablespoon oil in a large ovenproof skillet over medium heat. Add chicken; cook until browned, turning once. Transfer to the oven; bake for about 15 minutes or until no longer pink (170°F).
Meanwhile, whisk together vinegar, the remaining 2 tablespoons oil, cumin, salt and black pepper in a large bowl. Gently stir in avocado, papaya, bell pepper and cilantro. Serve the salsa with the chicken. If desired, garnish with cilantro sprigs.
