Thaw shrimp, if frozen; set aside. Heat oil in a large skillet over medium-high heat. Add celery, bell pepper, onion, Cajun seasoning and oregano; cook, stirring, until vegetables are tender. Carefully add broth; bring to a boil.
Stir couscous, tomato and shrimp into the pan. Remove from heat; cover and let stand for 5 minutes. Fluff the couscous mixture with a fork. If desired, serve with hot sauce and lemon wedges.
