Cook wheat berries as per package directions with 1/2 teaspoon salt. Drain.
Meanwhile, season steak with 1/4 teaspoon salt and pepper. Heat 2 tablespoons oil in a large skillet over medium-high heat. Add steak; cook 5 minutes. Flip; cook 6 more minutes or to desired doneness. Let rest 5 minutes.
Reduce heat to medium. Add tomatoes and cook 3 minutes. Whisk in vinegar, remaining 1 tablespoon oil, mustard and 1/4 teaspoon salt. Remove from heat. Slice the steak, reserving the sauce in the pan.
In a very large bowl, toss spinach, wheat berries, apple, sauce from the pan and the remaining 1/4 teaspoon salt. Top with the sliced steak.
