Preheat oven to 400°F. Coat a 9-inch tart pan with cooking spray. Place pie crust into the pan and remove excess dough from around the edges. Prick the bottom of the crust all over with a fork. Bake for 12 minutes; let cool. Reduce oven temperature to 350°F.
Spread cheese evenly over the bottom of the crust. Alternately arrange tomato and zucchini slices on top of the cheese. Sprinkle with salt and pepper.
Bake the tart for 40 minutes or until nicely browned and zucchini slices are fork tender. Garnish with fresh thyme; cool slightly and serve.
