To prepare meatloaf: Preheat oven to 400°F. Coat a large roasting pan with 2 tablespoons oil.
In a large bowl, mix turkey, onion, carrot, breadcrumb mixture, Parmesan, ketchup, eggs, 1 teaspoon salt, 1 teaspoon poultry seasoning and garlic-pepper seasoning. Divide in half; form into 2 loaf shapes. Place each in prepared pan. Bake for 60 to 70 minutes or until internal temperature registers 160°F on an instant-read thermometer.
Meanwhile, prepare gravy: Heat oil in a large skillet over medium heat. Add mushrooms; cook 5 minutes. Stir in flour; cook 1 minute. Gradually whisk in broth, wine, poultry seasoning and salt. Simmer 3 minutes.
Serve meatloaves with gravy.
