Preheat oven to 375°F. In a large bowl, stir together drained sauerkraut, onion, parsley and caraway seeds. Transfer sauerkraut mixture to a 3-quart rectangular baking dish. Top evenly with 1 1/2 cups cheese, 2/3 cup salad dressing and corned beef. Top with the remaining 2/3 cup salad dressing and 1 1/2 cups cheese.
Brush bread slices with melted butter. Arrange on top of cassserole. Bake, uncovered, about 35 minutes or until heated through and bread is toasted. Top with remaining cheese; bake about 5 minutes more or until cheese melts.
