To prepare crust and crumbs: Preheat oven to 350°F. Line a 13-by-9-inch metal baking pan with nonstick foil.
Combine 2 cups flour, sugar, almonds and salt in a food processor. Pulse to finely grind almonds and blend ingredients. With processor running, add butter and vanilla. Reserve 2/3 cup of the mixture and press the rest into the bottom of the prepared pan. Bake for 25 minutes. Meanwhile, with your hands, blend the remaining 2 tablespoons flour into the reserved crumbs.
To prepare filling: In a medium bowl, whisk sugar and flour. Whisk in eggs, then jam. Whisk in lemon juice and zest.
Remove the crust from the oven and pour the filling over the crust. Return to the oven and bake for 15 minutes. Sprinkle the crumbs over the top and bake for an additional 15 minutes. Cool in the pan on a rack. Chill before cutting into bars. Refrigerate until packaging or serving.
