Season pork with salt and pepper. Heat oil in a 12-inch skillet over medium-high heat. Add pork and onion to skillet. Cook 3 minutes; flip pork and stir onions. Cook 3 minutes more.
Meanwhile, in a small microwave-safe bowl combine preserves, mustard, water, paprika and nutmeg. Heat in microwave for 1 to 2 minutes or until mixture is melted. Pour over pork in skillet, reduce heat to medium. Cook, covered, 10 minutes or until an instant read thermometer registers 160°F. Divide pork and onion mixture among serving plates; top with sage.
