Preheat oven to 400°F. Combine honey and red pepper flakes; set aside.
In a small bowl, combine flour, 3/4 teaspoon salt and the black pepper. In a second bowl, beat egg. In a third bowl, combine cornflake crumbs and the remaining 1/4 teaspoon salt. Dredge chicken in flour, then egg and finally in cornflakes.
Heat butter and oil in a large saucepan over medium-high heat. Sear chicken 3 minutes per side, until golden. Transfer chicken to a baking sheet and bake for 10 minutes, until cooked through.
Place chicken on toasted waffles. Drizzle with spicy honey and serve with broccoli slaw, if using.
