In a small bowl, lightly toss chopped eggs with 1/4 cup blue cheese dressing; season with salt and pepper. Set aside.
Divide the remaining 1/2 cup blue cheese dressing among the toast slices, spreading evenly on the top side. Layer four of the slices with lettuce, tomatoes, red onion, egg mixture and bacon. Top with the remaining toast slices, spread-sides down.
If desired, secure sandwiches with toothpicks threaded with cherry tomato halves. To serve, cut each sandwich in half with a sharp knife.
