Cook sweet soybeans according to package directions; drain. Transfer to a large bowl. Add jicama or cauliflower and carrot; add salad dressing and pepper, stirring to coat. Divide between two airtight storage containers. Cover and chill overnight. Divide lettuce leaves between two resealable plastic bags. Cover and chill overnight.
For each serving, pack a container of the vegetable mixture and a bag of lettuce in an insulated lunch box with an ice pack. Serve within 5 hours.
To serve, spoon salad onto lettuce leaves; wrap leaves around salad.
