Horizontally split tenderloins to make four 1/2-inch-thick steaks. Rub with sage; sprinkle with salt and pepper. Heat 1 tablespoon butter in a very large skillet over medium-high heat. Add turkey; cook for 14 to 16 minutes or until no longer pink (170°F), turning once. (Reduce heat to medium if turkey browns too quickly.) Remove from the pan. Add spinach to the pan; cook and stir until just wilted.
Meanwhile, heat the remaining 1 tablespoon butter in a small skillet. Add pear slices; cook, stirring occasionally, for 5 minutes or until tender and lightly browned. Serve the turkey with the spinach and pears. Top with blue cheese.
