In a large bowl combine shredded apple, nuts, sage, black pepper, salt, paprika, cayenne pepper, and nutmeg. Add ground turkey; mix well. Shape mixture into four 1/2-inch-thick patties.
Lightly coat the unheated rack of a broiler pan with cooking spray. Arrange patties on rack. Broil 4 to 5 inches from the heat about 10 minutes or until no longer pink (165°F), turning once halfway through broiling time. (Or coat an unheated large skillet with cooking spray. Preheat over medium heat. Add patties to hot skillet. Cook for 8 to 10 minutes or until no longer pink [165°F], turning once halfway through cooking time. If patties brown too quickly, reduce heat.) Makes 4 servings.
