For pimento cheese, in a small bowl beat the cottage cheese with an electric mixer on medium speed until nearly smooth. Stir in the next five ingredients (through paprika) until combined.
Starting with the zucchini, arrange half of the zucchini and half of the tomato slices on the cut sides of the bottom halves of the bagel thins. Spread pimiento cheese evenly on top of the tomatoes. Arrange remaining tomato and zucchini slices evenly on top of the cheese starting with the tomato. Add bagel tops. Wrap in parchment paper, tucking in the ends.
