(3 cups beef mixture and 3 cups rice)
In a large skillet heat oil over medium-high heat. Add half of the beef and all of the onion; cook and stir about 5 minutes or until beef is browned. Remove from skillet. Add remaining beef; cook and stir about 5 minutes or until beef is browned. Return all beef to the skillet. Stir in tomatoes, broth, thyme and black pepper. Bring to a boil; reduce heat. Simmer, uncovered, for 5 to 10 minutes or until desired consistency.
Meanwhile, cook rice mix according to package directions. Serve beef mixture over rice. If desired, sprinkle with Parmesan and/or crushed red pepper.
