For dressing, in a screw-top jar combine vinegar, olive oil, mustard, honey, hot pepper sauce, salt and pepper. Cover and shake well to combine. Set aside.
Place sweet potatoes in a steamer basket; set over boiling water. Cover and steam sweet potatoes about 7 minutes or until tender. Transfer potatoes to a large bowl. Drizzle with 1 tablespoon of the dressing. Toss gently to coat; set aside.
Heat a large nonstick skillet over medium-high heat, coat with cooking spray. Add pork; cook and stir about 6 minutes or until pork is browned but still slightly pink in the center. Remove from heat. Add pork, mustard greens and apple to the sweet potatoes. Shake remaining dressing; pour over sweet potato mixture, toss to coat. Serve warm.
