Cook pasta according to package directions, except omit salt. Drain; set aside.
Meanwhile, in a large skillet, heat oil over medium-high heat. Add shallots and garlic; cook for 3 to 4 minutes or until shallots are tender, stirring frequently.
Add wine (or water) to the pan; cook until evaporated, scraping up any browned bits. Add Brussels sprouts; cook and stir for 3 minutes more. Add bok choy; cook and stir for 2 minutes.
Add the cooked pasta to the vegetable mixture in the pan. Stir in vegetable oil spread, Italian seasoning, salt and pepper. Transfer to a serving dish. Sprinkle individual servings with Parmesan.
