Combine vinegar, oil, water, salt and pepper in a screw-top jar. Cover and shake well; set aside.
Place squash slices on the greased rack of an uncovered grill directly over medium coals. Grill for 5 to 6 minutes or until crisp-tender, turning once halfway through grilling time. Add tomato slices to rack; grill for 2 to 4 minutes or until heated through but still slightly firm, turning once halfway through grilling time.
Divide greens among 4 dinner plates. Top with grilled tomato slices, squash and cheese. Sprinkle with additional pepper. Drizzle dressing over vegetables. Sprinkle with snipped fresh herbs.
