Heat oil n a large skillet over medium-high heat. Add garlic and shallots; sauté for 2 minutes. Add mushrooms; cook, carefully stirring occasionally, until tender. Maitake will take 10 to 12 minutes, button and oyster mushrooms will take 6 to 8 minutes, shiitake mushrooms need only 4 minutes. Stir in herbs, salt and pepper.
