For glaze, in a small bowl, stir together apricot preserves and cinnamon.
Preheat a charcoal grill. Place chops on the grill rack directly over medium coals. Grill, uncovered, for 8 to 10 minutes or until done (160°F), turning once and brushing with glaze halfway through grilling. (For a gas grill, preheat grill. Reduce heat to medium. Place chops on grill rack over heat. Cover and grill as above.) Place one chop on each of four serving plates and sprinkle chops with thyme.
