In a medium saucepan, combine water, soy milk, oats and salt. Bring to a boil; reduce heat. Simmer, uncovered, for 25 to 30 minutes or until oats are of desired doneness, stirring occasionally. Stir in brown sugar and vanilla.
Spoon oatmeal into bowls. Top each serving with fresh cherries, pecans and dried cherries.
