In a medium bowl, stir together milk, carrot, green onions, breadcrumbs, garlic salt, Italian seasoning and pepper. Add the ground meat; mix well. Divide the mixture into four portions. Shape each portion into a 1/2-inch-thick patty.
Grill patties on the rack of an uncovered charcoal grill directly over medium coals for 11 to 14 minutes or until an instant-read thermometer inserted into the side of each patty registers 160°F for beef or 165°F for turkey or chicken, turning once halfway through grilling. (For a gas grill, preheat grill. Reduce heat to medium. Place patties on grill rack over heat. Cover and grill as above.)
If desired, combine mustard and curry powder and spread on the bottoms of buns. Layer patties with lettuce leaves, tomato and zucchini. Add bun tops.
