Rinse and drain pickled vegetables well. In a large microwave-safe bowl, combine pickled vegetables, spinach, mozzarella, sun-dried tomatoes, garlic and pepper. Microwave, uncovered, on High for about 2 minutes or just until mixture is warm, spinach is wilted and cheese is beginning to melt.
To assemble sandwiches, layer 4 of the bread slices with half of the vegetable mixture; top with 4 more bread slices. Layer with the remaining vegetable mixture and the remaining 4 bread slices. Cut each sandwich in half diagonally.
