Place beans in a medium bowl and mash beans with a fork or potato masher. Stir in 3/4 cup breadcrumbs, carrot, onion, egg, 1 tablespoon parsley, 1 tablespoon oil, salt and pepper. Place the remaining 3/4 cup breadcrumbs and 1 tablespoon parsley in a shallow dish; stir to combine.
Shape the bean mixture into 4 round patties (mixture will be soft). Dip both sides of patties into the breadcrumb mixture to coat.
Heat the remaining 2 tablespoons oil in a large skillet over medium heat. Add patties. Cook for 4 to 5 minutes per side or until browned and an instant-read thermometer inserted near the center registers 160°F.
To prepare tomato sauce: place tomatoes in a blender or food processor. Cover and blend or process to desired consistency. Pour into a bowl and stir fresh basil. Season to taste with salt and pepper.
To prepare apple salad: slice apples; set aside. In a bowl whisk together lemon juice, olive oil, honey and 1/4 teaspoon salt. Add apple and onion slices; toss.
Arrange spinach on bread slices and place bean burgers on top. Serve each burger topped with 2 tablespoons of the tomato sauce and the apple salad on the side.
