Preheat oven to 375°F. Coat a 6- to 10-ounce ramekin with nonstick cooking spray; set aside. In a small bowl, whisk together eggs, feta, dried tomato, oregano, salt and 1/8 teaspoon pepper. Pour egg mixture into the prepared ramekin.
Bake for 18 to 20 minutes oruntil puffed and a knife inserted near the center comes out clean. Ifdesired, top with additional chopped oil-packed dried tomato. Serve with cantaloupe sprinkled with the remaining pepper and slice of bread, toasted and drizzledwith honey.
