Preheat oven to 375°F. Peel sweet potatoes; cut crosswise into 1/4-inch slices. Arrange sweet potatoes in a 2-quart square baking dish. Add the water; sprinkle with 1/4 teaspoon salt and 1/8 teaspoon pepper. Bake, covered, about 30 minutes or until potatoes are tender; drain.
Meanwhile, for caramelized onion, in a large skillet heat oil over medium-low heat. Add onion. Cook, covered, about 15 minutes or until onion is tender, stirring occasionally. Sprinkle with 1/4 teaspoon salt and 1/8 teaspoon pepper. Cook, uncovered, about 2 minutes more or until onion is light brown, stirring constantly.
To serve, spoon caramelized onion over potatoes. Sprinkle with thyme.
