Heat rice according to package directions; set aside. Heat 1 tablespoon oil in a large skillet over medium-high heat. Add beef strips and cook until brown; remove from pan. Add stir-fry vegetables and the remaining 1 tablespoon oil to the pan. Cook until tender. Drain any excess liquid; discard.
In a small bowl, combine orange juice, soy sauce, cornstarch, ginger, crushed red pepper and salt. Return the beef to the pan. Add the sauce mixture; cook and stir until thick and bubbly. Serve over rice. If desired, sprinkle with almonds.
