Lightly coat a 3-quart rectangular baking dish with cooking spray; set aside. In a large skillet heat butter over medium-high heat until melted. Add onion and bell pepper; cook for 3 minutes, stirring occasionally. Add asparagus and 1/4 cup broth. Simmer, covered, about 3 minutes or until asparagus is crisp-tender. Transfer vegetables to a large bowl; cool slightly.
Add chicken (or turkey) and mayonnaise to vegetable mixture; mix well. In a medium bowl combine eggs, milk, the remaining 1 1/4 cups broth, chives, mustard, salt and black pepper.
Spread half of the focaccia cubes in the prepared baking dish; top evenly with chicken mixture. Spread the remaining focaccia cubes over chicken mixture. Carefully pour egg mixture over ingredients in the dish. Cover tightly with plastic wrap and chill overnight.
To serve, let strata stand at room temperature for 15 minutes. Preheat oven to 350°F. Bake, uncovered, for 40 to 45 minutes or until set and light brown. Sprinkle with cheese. Bake, uncovered, about 10 minutes more or until cheese is melted.
