Scrub or peel potatoes. Using a mandoline, slice potatoes about 1/8 inch thick. Layer half the potatoes in the bottom of a 3-1/2- to 4-quart slow cooker. Sprinkle with half of the salt and half of the pepper. Sprinkle with half of the chopped green onions, half of the bacon and half of the garlic. Repeat layers. Drizzle evenly with butter.
Cover and cook on Low for 5 1/2 to 6 hours or until potatoes are tender when pierced with a fork. Loosen edges with a spatula. Garnish with the sliced green onions.
