Heat butter in a very large skillet over medium-high heat. Add potatoes, onion and garlic; cook 8 to 10 minutes or until tender. Transfer to a serving platter; cover to keep warm. Add meat to the pan (add 1 tablespoon cooking oil if necessary). Cook and stir for 3 minutes; add to potatoes, reserving drippings in pan. Cover; keep warm.
In the same skillet, cook apples, cut-sides down, for 2 minutes or until browned. Stir in cider. Bring to a boil; reduce heat. Simmer, covered, for 4 to 6 minutes or until apples are tender; remove apples from pan with a slotted spoon. Cover; keep warm.
Remove pan from heat. Whisk sour cream, salt and pepper into juices in pan until smooth. Spoon sauce over steak, potatoes and apples.
