Preheat oven to 350°F. In a large bowl combine eggs, bread crumbs, tomato juice, parsley, oregano, salt, pepper, and garlic. Stir in ground beef; mix well.
On a large piece of foil, pat meat mixture into a 10x12-inch rectangle. Arrange the prosciutto slices on the meat, leaving a 3/4-inch border around all edges. Sprinkle 1 1/4 cups of the mozzarella cheese over the prosciutto. Starting from a short end, carefully roll up meat, using foil to lift; seal edges and ends. Place meat roll, seam side down, in an ungreased 13x9x2-inch baking pan.
Bake, uncovered, about 65 minutes or until an instant-read thermometer inserted in the center registers 160°F and juices run clear. (Center of meat roll will be pink due to prosciutto or ham.) Sprinkle the remaining 1/4 cup mozzarella cheese over top of meat roll. Bake, uncovered, about 5 minutes more or until cheese is melted. Let stand for 10 to 15 minutes before slicing.
